About Orval: The Orval beer differs from most of its Trappist brethren in that it does not fall under the typical big, sweet-ish categories of tripel, quad, or other strong Belgian ale. It is instead a relatively mild pale ale, and receives a considerably high level of dry-hopping before packaging. At bottling, the beer is dosed with a small charge of Brettanomyces, a semi-wild yeast that yields the funky, rustic phenolic notes the beer is known for.
