From June 24-30, Brasserie V–along with a score of other Madison restaurants–is teaming up with the Madison Area Chefs Network for Sustainable Seafood Week. Co-sponsored by the James Beard Foundation, Sitka Salmon Shares, and Sea to Table, Sustainable Seafood Week’s aim is to support and promote sustainable fishing practices. We try to do our part here at Brasserie V, ordering our seafood through small, independent companies like Rushing Waters and Sturgeon Bay; we typically receive deliveries every other day, which helps ensure that our stocks remain fresh.
For Sustainable Seafood Week, we’ll be offering two special dishes for this occasion only. They’re made with sustainable, responsibly harvested seafood, and clock in at just $10 apiece. See below for details, and we’ll see you on June 24th!
